Getting Together for Labor Day!

I loved getting together with neighbors and friends, I will use practically any excuse to hang out. This weekend is a great excuse! It’s Labor Day weekend! I’m inviting a couple of friends and a few neighbors.
We get together and each of us brings in particular items for the meal. We make the menu beforehand, and when everyone is at my apartment we cook! It’s actually very relaxing. After lunch we go out to the pool and relax and enjoy the sun.

It’s Time for a Picnic At Home!

Turtle Cove Apartment Homes proudly has a large gazebo with picnic areas for our residents! So why not use it?
It’s always great to eat at home and in this great West Palm Beach weather why not eat outside. Grab a couple of friends and neighbors and take it outside!
Having a picnic doesn’t require much effort on anyone’s part. You can even bring it back to its roots and make it a potluck picnic. There are many items you need to bring and different types of foods, but here are my favorites!
- A blanket or table cover
- Cooler/Ice Chest
- Picnic Basket (Must have for a picnic!)
- Re-usable Containers
- Napkins
- Fried Chicken!
- Sandwiches

Don’t let the name of this restaurant confuse you. This Thai restaurant has some great kick! Off of Palm Beach Lakes Blvd. this is definitely “good eats”, as Alton Brown would say. Have it either dining it or out, it doesn’t matter you can try their curries and rice throughout the day.
I came upon this place and thought it wasn’t going to be much. The shopping plaza that it’s located in looks a bit silly but people always say, “it’s the small places that are the best.” You do have to indicate how spicy you would like your dish because they can get a bit spicy.
The restaurant isn’t too far from Turtle Cove Apartment Homes, it’s definitely worth trying!

MmmMemorial Day is Here!

Next weekend is Memorial Day weekend and we all know what that means. Summer will officially be here and we’re all ready to celebrate! Memorial Day is the beginning of sparkling pool, grilling and hot weather…cannot wait! Here’s a great recipe to help you celebrate Memorial Day!
Grilled Corn Salad with Lime, Red Chili and Cotija
* 8 ears fresh corn, silks removed, husk on, soaked in cold water 30 minutes
* Canola oil
* Salt and freshly ground black pepper
* 1/4 cup creme fraiche
* 2 limes, juiced and 1 zested
* 1 tablespoons ancho chili powder
* 1/4 cup chopped fresh cilantro leaves
* 1/4 cup grated cotija cheese
Heat grill to high. Grill corn until charred on all sides, 10 or so minutes. Take off the grill and remove the kernels with a sharp knife. While you are cutting the corn, put a cast iron skillet on the grill to heat.
Add the corn and the remaining ingredients to the hot pan and cook, stirring occasionally, until creamy and heated through. Serve with the steak.
The Ultimate Dessert

Desserts are my favorite, I definitely have a sweet tooth. I’m always looking for easy and quick recipes for desserts. After making such a large meal I want to whip up a delicious dessert in my apartment quickly. I was in my living room just relaxing and I found the recipe for Mini Pancakes with Raspberry Sorbet and Chocolate Sauce. Sounds difficult doesn’t it? It’s actually very easy and it tastes great!
Mini Pancakes with Raspberry Sorbet and Chocolate Sauce
* 1 cup buttermilk pancake mix (recommended: Krusteaz Buttermilk)
* 3/4 cup water
* 1 1/2 tablespoons unsalted butter, at room temperature
* 1 cup semisweet chocolate chips
* 1/2 cup heavy cream
* 1 cup raspberry sorbet or gelato, softened
* 1/2 cup raspberries
In a small bowl, whisk together the pancake mix and water until just blended and slightly lumpy. Melt the butter on the griddle. For each pancake, add 1 tablespoon of batter to the griddle. Cook until golden brown, about 1 to 1 1/2 minutes on each side. Remove to a plate and allow the pancakes to cool completely.
Add the chocolate chips and cream to a small bowl. Set the bowl over a small saucepan of barely simmering water. Stir until the chocolate melts and the mixture is smooth.
To serve, put a pancake on a small serving plate. Top with a 1-ounce scoop of sorbet and put another pancake on top of the sorbet. Drizzle with the chocolate sauce and garnish with raspberries. Repeat with the remaining ingredients.
Cook’s Note: Instead of using a 1-ounce cookie scoop, you can make a 1-ounce portion with a tablespoon-size measuring spoon.

If you’re looking to get some dinner at Newport Cafe off of Forest Hill Blvd. you’re looking to the wrong place. Why? Well it’s not open. Many people wish that the Newport Cafe would be open for dinner but you simply have to have an early dinner to eat here. Newport Cafe serves traditional American cuisine, their salads are crisp and very tasty, while the desserts are even better! Today I Get to Pay Tribute to My Favorite Beer!
I may not be Irish but I sure do enjoy their beer. Guinness is by far one of my favorite adult beverages. No Green beer for me on St. Patty’s Day… I go out to a pub that serves Guinness on tap instead. No use trying to buy it from the grocery store it’s just not the same as a true pint. So I will lift my glass to one of the most well crafted beers. They have been making it the same way for over 250 years. Not to mention it is low in alcohol carbs and calories compared to regular beer. Studies even claim that Guinness can be beneficial to the heart. Researchers found that antioxidant compounds in Guinness, similar to those found in certain fruits and vegetables, are responsible for health benefits because they slow down the deposit of harmful cholesterol on the artery walls. So you have a few people over for dinner. You go to the fridge to grab someone a refill on their drink only to discover that there are no more cold drinks. You had stocked up but the room in you fridge limited you on the number of things you can chill at one time. Because your no longer a college freshmen you hadn’t broken out that dirty cooler you keep hidden, so what do you do. You can throw a couple cans and bottles in the freezer and hope they cool in about 20mins, but don’t forget about them or you may have a big mess in the morning because they will explode. Where am I going with all this… Well I have a solution to your problem!
